Job Description:

The Cook 3 - Butcher position is an advanced professional cook position, requiring extensive meat cutting skills as well as previous culinary experience. This person should have a natural passion for food and desire to grow as a culinary professional. This position entails providing the highest quality product for restaurants, garde manger and banquets, by trimming and cutting items to maximize their full potential. The butcher is responsible for the consistent and accurate cutting and portioning of all center of the plate proteins, as well as the complete utilization of all usable trim to contribute to financial success of culinary division. The Butcher works closely with the Executive Chef, Sous Chefs and Purchasing on meat and fish inventory, labeling, rotation of food, requisitions and controls all returned items. This position also oversees all activities in the butcher shop, and maintains the highest possible standard for a sanitary work area.

Other Job Responsibilities May Include:

  • Complete and distribute outlet requisitions accurately and in a timely manner
  • Maintain accurate inventory and proper rotation of product
  • Work closely with purchasing department
  • Maintain proper portion control of all products
  • Provide ideas and suggestions toward menu items and specials
  • Adhere to proper food handling, sanitation, and safety procedures
  • Ability to operate kitchen equipment including but not limited to; meat grinder, slicer, and knives

Due to COVID-19 Cleanliness protocols, this role may call for new duties to ensure safety and cleanliness of frequent touch points and all colleagues must adhere to our COVID-19 prevention plan, includes wearing mask, temperature check and cleaning/disinfecting areas outside department.

 

Qualifications

 

  • Clear and professional communication skills
  • Team oriented
  • Committed to quality with an ongoing passion for learning and development
  • Candidates should be able to perform all basic, intermediate and advanced culinary skills with at least (3) years of culinary experience desired
  • Prepared to stand for majority of shift
  • Ability to lift and carry 50 lbs.
  • Able to work a flexible schedule including holidays and weekends
